Rosemary Tomato Focaccia
Ingredients
1 (10 ounce) tube refrigerated pizza crust
1/4 cup olive oil
2 garlic cloves, minced
Salt and pepper to taste
2 tablespoons fresh rosemary, crushed
2 fresh tomatoes, sliced
1/4 cup Parmesan cheese, grated
1/4 cup minced fresh parsley
MethodRoll out pizza crust and place on a greased baking sheet. Poke indentations with fingertip about 1 inch apart all over the crust.
Combine olive oil, garlic, salt and pepper and 1 tablespoon of rosemary and spread over pizza crust. Top with remaining rosemary, tomatoes, Parmesan cheese and parsley and bake for 10 - 15 minutes at 425 degrees F.

Danish Rye Bread
Ingredients1 cup warm water
1 tablespoon yeast
1 tablespoon white sugar
1 cup rye flour
1 teaspoon yeast
1 teaspoon white sugar
1/2 cup warm water
1 cup rye flour
1 tablespoon white sugar
1 tablespoon kosher salt
1 cup warm water
2 cups rye flour
1 cup sifted all-purpose flour (optional)
Method
In a large bowl, combine 1 cup water, 1 tablespoon yeast, 1 tablespoon sugar, and 1 cup rye flour. Cover batter with a damp cloth, and place in a warm, draft-free spot.
In the evening, mix in 1 teaspoon yeast, 1 teaspoon sugar, 1/2 cup warm water, and 1 cup rye flour. Cover again, and set aside overnight.
In the morning, mix in 1 tablespoon sugar, 1 tablespoon kosher salt, and 1 cup warm water. Gradually mix in 2 cups rye flour and 1 cup of all-purpose flour (if using). When the dough has pulled together, turn it out onto a lightly floured surface and knead for about 5 minutes. Form into a loaf, and place on a baking sheet. Allow to rise for about 40 minutes.
Preheat oven to 375 degrees F (190 degrees C). Bake for about 30 minutes, or until the bottom of the loaf sounds hollow when tapped.

Chocolate Bunny Bread
Ingredients
2/3 cup milk (70 to 80 degrees F)
1 egg
2 tablespoons butter or margarine, cut up
2 teaspoons vanilla extract
1/2 teaspoon salt
2 cups all-purpose flour
1/3 cup granulated sugar
3 tablespoons cocoa powder
1 tablespoon bread machine yeast
1/4 cup milk chocolate or peanut butter chips
MethodAdd all ingredients except chocolate chips to bread machine pan. Process on dough cycle. When complete, remove dough to floured surface. Divide dough in half.
BODY: Knead chocolate chips into one piece of the dough; form into ball. Place on greased baking sheet; flatten to 5-inch round.
HEAD: For 1/3 of remaining dough into ball. Flatten slightly; attach to body by pinching together.
NOSE: Pinch off 1/2-inch ball from remaining dough; place on head. Divide remaining dough into 6 pieces.
ARMS: Roll 2 pieces into balls and attach to each side of the body.
FEET: Shape 2 pieces into 2-inch ropes.
EARS: Shape remaining 2 pieces into 4-inch ropes and arrange above head, tucking ends under head. Cover; let rise in warm place.
Bake in a 350 degree F oven for 35 to 40 minutes or until done, tenting with foil after 15 minutes to prevent over browning. Remove from pan; cool on wire rack. Decorate as desired.

Blueberry Buttermilk Biscuits
Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup granulated sugar
1 teaspoon grated orange rind
1/3 cup shortening
1 egg, beaten
3/4 cup buttermilk
1/2 cup fresh or frozen blueberries
3 tablespoons melted butter or margarine
3 tablespoons granulated sugar
1/8 teaspoon cinnamon
Dash of nutmeg
MethodIn medium bowl, mix flour, baking powder, baking soda, salt, sugar and orange rind together. Using a pastry cutter or two knives, cut the shortening into the flour mixture until it resembles coarse meal.
In small bowl lightly beat egg with fork. Add the buttermilk to the beaten egg, then add it to the flour mixture. Using a fork, stir until just moistened. Add the blueberries. Stir gently just to mix. Turn dough out onto floured surface or cloth and gently knead 3 or 4 times. Roll out to 1/2-inch thickness. Cut with biscuit cutter or into desired shapes. Place on lightly greased cookie sheet and bake at 400 degrees F for 15 minutes or until golden.
Mix butter with sugar, cinnamon and nutmeg and brush onto tops of biscuits as they come from the oven.
Makes 12 to 15 biscuits.

Banana Nut Cinnamon Swirl Bread

1/2 cup Egg Beaters� 99% egg substitute (or 2 eggs)
2 tablespoons milk
1 large ripe banana, broken into 1-inch pieces
1 1/2 tablespoons butter
1 1/2 tablespoons granulated sugar
1 1/2 teaspoons salt
3 cups bread flour
2 1/4 teaspoons bread machine yeast
Filling
1 1/2 tablespoons softened butter
3 tablespoons brown sugar
3/4 teaspoon ground cinnamon
3 tablespoons chopped pecans (or walnuts)
MethodPut the dough ingredients in the bread pan in the order suggested by your bread machine instructions. Set for white bread, dough stage. Press start.
When the dough is ready, turn it out onto a lightly floured board and punch it down. Let it rest a for a few minutes. Roll the dough into a rectangle no more than 9 inches wide, or the length of your loaf pan. Spread the softened butter over the dough.
In a small bowl, combine the the brown sugar, cinnamon and nuts. Sprinkle the cinnamon mixture evenly over the dough. Roll up the dough, jellyroll fashion, starting with the short, 9-inch side, forming a loaf; pinch the edge to seal.
Spray a 9 1/2-inch loaf pan with no-stick spray. Place the shaped loaf in the pan, seam side down. Cover and let rise in a warm place until the loaf has doubled in size, about 1 hour. Preheat the oven to 350 degrees F.
Bake the loaf in the preheated 350 degree F oven for 30 to 45 minutes or until the loaf is golden brown. Turn out of the pan and place on a wire rack to cool.
Yield: 1 (1 1/2-pound) loaf
Serving Ideas : Delicious served with butter and strawberry fruit spread!

Method
To prepare this Prune And Date Bread Recipe, first mix together flour, sugar, salt and baking powder. Add milk and beat well. Add melted shortening and fruits. Put into greased bread pan. Allow to stand for about 20 minutes. Bake in moderate oven for about 45 minutes.
