SPICY BANANA MUFFINS

Recipe
SPICY BANANA MUFFINS
Ingredients
1 cup brown rice flour
1/3 cup soya flour
2 tsp baking powder
1/2 tsp mixed spice
1/2 tsp ground cinnamon
1 cup unprocessed rice bran
1/3 cup brown sugar
1 cup mashed banana
1/2 cup sultanas
1 cup soy milk
1/2 cup chopped dried apricots
2 ozs dairy-free melted margarine
Method
Prepare oven to 420F, prepare pans. Sift flours, b/pdr and spices
into bowl, add remaining ingredients; stir until just combined.
Spoon into pans and bake for about 35 mins or until cooked. Dust
with sifted icing sugar if desired. Makes 12 muffins.

Almond Crescents

Recipe
Almond Crescents
Ingredients
1 cup coconut oil (solid)
1/3 cup honey
2 Tablespoons water
2 teaspoon vanilla
2 cups oat flour (blend oats in blender)
1/2 cup ground almonds
2 tablespoons ground or finely slivered almonds
Method
Cream together the oil and honey. Add water and vanilla. Blend
in flour and ground almonds. Chill the dough. Shape into logs 1
inch in diameter and 6 inches long. Cut in half and shape into
crescents. Place on oiled cookie sheet. Brush with oil and sprinkle
with ground or slivered almonds. Bake at 325 to 350 degrees F.
for 12 - 15, minutes until lightly browned around edges. Leave on
the tray to cool and firm up.

Low Carbohydrate Baked Custard
Ingredients
4 eggs, beaten
2 cups heavy cream
12 packets Equal
1 tsp vanilla extract
Nutmeg
Method
Stir all ingredients together until well-mixed. Place in a Pyrex
baking dish and sprinkle with nutmeg (or grate fresh nutmeg on it.)

Place baking dish in a shallow pan of water and bake at 325 degrees
for one hour, or until a knife inserted in the center comes out
clean.

Low fat Banana Nut Bread
Ingredients
1 1/2 cups flour
1/8 cup Egg Beaters
1/2 cup light corn syrup
1/2 cup sugar (1/2 to 1 cup)
1 cup bananas mashed
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup 1% low-fat buttermilk
1 cup grape-nuts
Method
Mix all ingredients; bake in a large sprayed loaf pan at 350 degrees
F. for 50-60 minutes. Do not over-bake. Test for doneness with
toothpick.

LOW-FAT APPLESAUCE MAPLE MUFFINS

Recipe
LOW-FAT APPLESAUCE MAPLE MUFFINS
Ingredients
2 cups whole wheat flour
1 Tbsp. baking powder
1 1/4 cups unsweetened applesauce
1/2 cup maple syrup
1/2 cup dark raisins or chopped walnuts
2 egg whites
Method
Combine the flour and baking powder, and stir to mix well. Add the
applesauce, maple syrup, and egg whites, and stir just until the
dry ingredients are moistened. Fold in the raisins or walnuts. Coat
muffin cups with nonstick cooking spray, and fill 3/4 full with
the batter. Bake at 350 degrees for 16 to 18 minutes, or just until
a wooden toothpick inserted in the center of a muffin comes out
clean. Remove the muffin tin from the oven, and allow to sit for
5 minutes before removing the muffins.Serve warm or at room
temperature. Makes 12 muffins.

LOW-FAT BEAN SPREAD

LOW-FAT BEAN SPREAD
Ingredients
1 Tbsp chicken stock
2 garlic cloves, minced
19 oz. can cannellini beans, rinsed and drained
3/4 tsp. ground cumin
1/4 tsp. salt
1/4 cup reduced fat mayo
1 Tbsp cider vinegar
36 melba rounds, or toasts
Method
In large skillet, heat stock over medium-high heat. Add garlic;
stirring frequently; cook 1 minute. Add beans, 1 tablespoon water,
cumin and salt; cook 3 minutes, stirring constantly and mashing
beans with back of spoon.

In small bowl, combine mashed bean mixture, mayonnaise dressing
and vinegar. Cover; cool to room temperature. Spread on melba
rounds. Makes 36 servings.
